Bharvan Baingan |Stuffed Eggplant18:00
This is the second day of presenting side dishes and I have made another family favorite recipe that I learned from my MIL.I love eggplants and can eat them in any form .This is a very simple and delicious eggplant dish and even if you don't like eggplants ,you are gonna love this dish.
250 gm small eggplant/aubergine/baingan
2 green chillies,chopped
1 teaspoon ginger,grated
a pinch aseftida
1 teaspoon cumin powder
1 teaspoon garam masala
1 teaspoon red chilli powder
1/2 teaspoon turmeric powder
2 teaspoon coriander powder
salt to taste
4 tablespoon oil
chopped coriander leaves
Mix the spice powders and salt.
Wash and pat dry the eggplants .Make a cross slits lengthwise.Fill a teaspoon of filling from both the openings .
Heat oil in a wok.Add aseftida and ginger.Saute for a minute.
Now add chopped tomatoes and chillies.Cook till tomatoes are done.Stir and add stuffed eggplants.
Cook covered for 20 minutes,stir occasionally or until eggplants are done.
Garnish with chopped coriander leaves and serve hot with roti or paratha.
Serve-4 Cooking time-25 minutes
